Notch8 at Fairmont Hotel Vancouver has done it again! With the new season, comes a new theme. Notch8 has decided to combine our love for classic board games with delicious cocktails and finger foods and transformed the Private Dining Room into a Games Room! From Wednesdays to Sundays, you'll be able to put your pinkies up with game inspired Afternoon Tea along with going head to head with your friends on your favourite games.

 

Aside from their popular Afternoon Tea, starting this Friday at 7pm, and every Friday until November 17th, they will awesome be offering "Tipsy Tea", which offers its guests fun cocktails, delicious bites, and an evening of competition, whether it be a game of Snakes & Ladders, or a competitive game of Monopoly!

Everywhere you go, where they give a damn at least, you'll see TWG and now you'll know you're in the presence of tea with a high assurance of freshness, unbeatable terroir and flavour combinations the folks over at Tetley, Earl Grey or Lipton simply can't pull off or wouldn't even try. TWG Vancouver does tea better than anyone in the city! Sure luxury restaurants and lounges have jumped on the bandwagon and offer a small selection of TWG wares, but you can rest assured they aren't getting the absolute freshest teas and I will bet $1,000,000 that they won't have half the selection!

 

The Jubilee Tea Set, created by the venerable Chef Cliff Hohl, - celebrates Canada turning 150 by offering ingredients that are truly Canadian. There's elk, salmon, all maple erythang and Canadian bacon so delicious it will satisfy even the ficklest of swine enthusiasts. The Jubilee tea was made specifically to celebrate the Canada's centennial and a half and is the first tea inspired by Canada.

Now Chef Cliff, happily a friend of Jenn and I, will take his recipes to his grave, but I can tell you this: if you crack these secrets you too can be the Executive Chef at one of Vancouver's best eateries. Miso sablefish is an iconic TWG staple; delicious, light and flaky, but TWG has added Canada's national treasure, maple syrup, to the mix and the results are deafening. Run, don't walk, and get down there and try it!

Ahhhhhh Wagyu... Why are you so delicious? How do you get that sought after marbling? The answer to these questions is... I haven't the faintest, foggiest idea, but what I do know is I once had a $152 Wagyu steak that changed the way I look at cows. Literally. For their Jubilee tea set TWG included a Wagyu beef burger that was so incredibly tender and savoury that I got angry. I was noticeably irritated. How do you do it Chef Cliff!?

The salmon came poached and accompanied with lemon Panna cotta and popcorn. I don't know about you, but when I think about going to the movies I invariably also think about eating fistfuls of buttery popcorn and getting 3 out of every 5 kernels into my mouth as the blur that is my eating arm pitches them from waist height to reduce the time it takes to reach back into the tub and repeat the process. You'd be hard pressed the find a dish that includes popped corn that I wouldn't like and today is not the day I start. Delicious!

There is a movement in the foodie community that has been around for a whole, but is really starting to take hold of late as we destroy our planet just a little bit more every year: sustainability. It can mean different things to different people, but the gist is "eat in a manner that is viable long term." So how do we do it? It must start by moving away, ever so slowly, from beef. Yes, I waxed poetically about my Wagyu lust above, but then just said that. But why? There are 3 main arguments against beef: Deforestation. We clear more carbon dioxide guzzling trees to accommodate these three-stomached behemoths than most other pursuits. Farts. The methane emitted from the flatulence of these giant beast is a major contributor to global warming. Google it. And finally shipping. Do you live near the Amazon where millions of these creatures roam where once the pieces of the mighty Amazon jungle stood majestically? Me neither. That's a lot of trucks and a lot of kilometres to cross before it gets in my tummy! Wild game is becoming more and more common on dining tables and restaurants and it is a good thing! The tourtière at TWG is a blend of Wagyu beef and elk, baby steps, and was my favourite dish in the tea set! It has amazing flavours words won't do justice. You'll have to go check it out!

 

Once you get to the dessert level of the tower of deliciousness (my suggestion for any possible future renaming of this tea set) your expectations are high. TWG wouldn't dare disappoint you at this point. Included is a maple eclair, delicious and not as sweet as you would imagine. Insider's tip: eat it upside down to avoid a mess! There was also a croque en bouche and a passionfruit and mango tart. The croque is worthy of any French bistro and the tart is absolutely delicious and the mousse just melts in your mouth! This post may spur you to try TWG for the first time, but service, their incredible newly renovated dining room and quality, absolute top quality, will be what keeps you coming back!

The Trump Champagne Lounge is a vivacious space! In only our first 5 minutes people watching proved to be very interesting: posh hotel guests walking through the lobby en route to their luxury digs, friends meeting for drinks, an engagement party and satisfied diners exiting Mott 32 with food coma grins. Giggling and judging people quietly to each other Jenn and I ordered the Sparkling Afternoon Tea and the Infinite Afternoon Tea. I'd humbly recommend only one tea set per pair, but gluttony is in, in 2017!

The Sparkling comes with a glass of Bartolomiol 'Miol' Prosecco Extra Dry and the Infinite with a very sophisticated Laurent-Perrier Brut. The Prosecco had a nice hint of blackberry and was full of flavour and the Brut was very tart, which I like, and had a fruit aromas with a slight citrus finish; delicious! We also ordered the Bain de Roses and Royal Darjeeling from the venerable TWG Tea.

Our tea set arrived, amalgamated, and sitting on a very unique hexagonal pedestal which really showed off its wares! Scones, as fresh as I've ever tasted, with a very frothy Devonshire cream and house made raspberry jam and lemon curd; lovely! We plunged into the tower with the Salmon à la Bombay Petite Sliders. Think smoked salmon with a mild curry kick, very good! The Rolled Egg Sandwich followed and the Italian Truffle tapenade really shines through just as the cream cheese stole the show in the Cucumber & Dill sandwich that followed. My first experience with my favourite condiment in the world, Sriracha, in a high tea set and it was a good one! Duck, delicious, mixed with oyster sauce, awesome, the aforementioned Sriracha, and wrapped in a fluffy crèpe! A very, very nice finger sandwich! I could have eaten 50.

Some people claim that breakfast is the most important meal of the day. Well I'm going to make an official argument for dessert finally getting the nod. Stay with me. Cake contains eggs, eggs contain protein and protein helps to rebuild and grow muscle. Sugar affects the same pleasure centre in the brain as cocaine. Would you rather kids did cocaine than eat cake?? Would you?? Cheese cake pops, hazelnut chocolate cake, Matcha and strawberry rolled cake, white chocolate and raspberry mouse and raspberry rose water lychee Paris Brest. Cake, cake, cake, mousse and whatever the last one is, not a bad way to end a delicious meal! You could go just for dessert and leave very satisfied!

Having had no fewer than 30 different afternoon teas in the last year I can pledge that Trump does it as well as anyone around! Their service is amazing, always, and the ambience is beautiful. You will not be sorry you went in even if you are sorry about its unfortunate name.  They're making us forge by offering world class hotel accommodations, luxury condos, sublime spa services, a raucous nightclub and incredible dining in Mott 32 as well as the Champagne Lounge where we found ourselves enjoying our tea experience. I would highly recommend you checking out Trump!

The Brut from Blue Mountain Vineyard and Cellars is a wonderful sparkling white with a dry, citrusy finish. We had been sitting no longer than a few minutes when Mr. Kyle Johnstone, the energetic Bacchus manager, brought us a couple of glasses of Blue Mountain's finest. Sitting in opulence, dark wood panelled grandeur, we sip our sparkling wine and watch our fellow patrons laugh and enjoy their meals. To say the atmosphere is upscale, the drink program amazing and the food way above average wouldn't be putting it firmly enough!

We are at Bacchus to preview their afternoon tea ahead of Mother's Day and decided on the Thunderbolt Darjeeling and Lavender Earl Grey. Mr. Johnstone has been covertly trying every afternoon tea around town to get inspiration for Bacchus' offerings and it shows! The presentation is top notch, the food hearty and plentiful and the tea is magnificent! I found the Thunderbolt Darjeeling more fruity than floral and it's packed with caffeine. There's a bit of a dryness, happily, to it that I found very satisfying and I thoroughly recommend it. For a period of about a decade I would not dry my clothes without a lavender scented dryer sheet. Ditto dish soap requiring a lavender hue. Shampoo, air freshener, body lotion... you get the idea. Having bucked the compulsive trend I still find myself partial to the sweet, soothing smell. The Lavender Earl Grey is as good as it sounds; the perfection that is Earl Grey augmented with the delicious, curative lavender. Worth a trip all on its own!

Three tiers of deliciousness are then placed in front of us.  Egg salad sandwiches, smoked salmon and cream cheese spirals, tandoori chicken sandwiches, shrimp salad sandwiches and cucumber sandwiches make up the bottom tier. I have had some bad experiences with egg salad. Think of the apprehension you have of tequila the next time you partake after it has done you wrong... this is the hesitation with which I took my first bite, but it was the best I have ever had and quickly disappeared. Smoked salmon is incredible, I think that's universally recognized? Cheese is amongst the best things on Earth and when you combine the two, as one should, the result is a perfect 10/10 sandwich; delicious! Tandoori chicken runs a close second to butter chicken in the hierarchy of Indian food according to Scotty and this sandwich doesn't disappoint. The shrimp salad sandwich was excellent and you can tell the shrimp was very fresh and supple. While I am a self proclaimed carnivore I have to admit that I found the cucumber sandwich very delicious. A cool, crisp and refreshing offering!

Tier two boasts a lovely English Fruit Cake, Almond Tart, Lemon Chiffon Cake and Fruit Tart. Fruit cake isn't to be feared. This isn't your aunt realizing her fruit bowl is going bad and using up everything in a "fruit cake" and freezing it to give as Christmas gifts 5 months later. This is fresh, fluffy and sweet fruit cake and I would have eaten a pound of it. Almonds are filled with protein. 21 grams of the stuff per 100 grams onto be exact. Ahhhhhhh so this is how vegans don't waste away to skeletons. I love them and this tart made me want to eat a garbage bag full! The chiffon cake was the perfect sweetness of lemon, not too tart and not diabetes inducing and the fruit tart was delicious and packed with vitamins. Who said dessert wasn't healthy?

Tier three, the top tier, is where the Atkins diet goes to die. Carbs, with carbs and some sugar. Scones, eclairs and macarons  with a heavenly Devonshire cream and fruit preserves. I have often waxed poetically about Devonshire cream and Bacchus does it as well if not better than most and it really complimented the fresh scones. Eclairs are luxury donuts, long johns packed with surprises. In this instance a rich cream that was so incredibly thick and fresh, delicious! The macarons were expertly done and the flavours, as is sometimes not the case, were well balanced. I mean at some places you'll see 'rose petal, watermelon, pineapple, crab apple, road apple, lemon, chocolate macarons'? Just stop.

The Wedgewood Hotel is a luxury boutique hotel just off Robson and Burrard in the heart of Downtown Vancouver and across the street from the Supreme Court of BC and the Vancouver Art Gallery. The Bacchus Restaurant, as Wedgewood's prestigious lobby bar, is frequented by lawyers, doctors from the nearby hospital, businessmen, professionals and celebrities. It is an excellent place to people watch, eat and drink or just sidle up to bar and watch the game. I would very highly recommend checking it out and maybe make a night of it, book a room upstairs and go wondering the paradise that is Vancouver!

Afternoon Tea Series: The Georgian at Fairmont Olympic Hotel by Jenn Chan

What a room! Grand in a prohibition era kind of way. 50 foot high ceilings, ornate columns and intricate mouldings. A very Downton Abbey feel in the middle of metropolitan Seattle. Adding to our experience was our extremely affable Fairmont host, Valerie, who was a wealth of knowledge on the room and the whole property really. We made a new friend!

Afternoon tea is a luxurious affair. Big Kentucky derby-inspired floppy hats, pinkies raised way up in the air and crisp dresses and suits. Judy Dench wouldn't look out of place here nor would Miley Cyrus if she were sipping her tea mere tables away. It's a space for everyone and there's something on the menu to satisfy their tastes! The first stop on our culinary adventure was mimosa town. On a groggy Saturday afternoon it is the perfect destination for a vacationer; I'll let you guess why! Jenn, Valerie and I raised our glasses to the Fairmont, without a drop of insincerity, and toasted them!

Soon the delicious teatime towers were brought out and placed in front of us. Jenn and I wisely chose the 1907 Blend Tea to accompany them; absolutely delicious and it immediately went into my top five tea list! Blueberry Scones Apricot Jam & Devonshire Cream were the first tier of our three tiered tea-stravaganza. I don't know where Devonshire is, but if you told me it was a magical land where hobbits go on mythical adventures I would believe you. If you told me they stole the recipe for this cream from a dragon I would believe it. The scones, made in-house, are so fresh and soft that they fall apart at the touch. Add the heavenly cream and the incredible apricot jam and it's a very, very satisfying carbohydrate delivery device.

My mom is a saint. I wanted for nothing growing up and love filled our home, but I'm not sure if it's a Manitoba thing or something completely Jean Allan; pronouncing sandwiches 'sammerches'. I think about her whenever I'm served a 'sammerch' and the tradition continued when I made my way to the second tier. Hereafter referred to as the 'sammerch tier'. Waldorf Sourdough Bread, Turkey, Apple, Raisins, Celery, Pecans and Herbs made up the first I tried. If I see a turkey sandwich with apple on a menu I order it. Every time. When I see a salad with pecans I do likewise. When I see a sandwich with both I shriek like a 12 year old girl seeing Justin Bieber. This sandwich is delicious!

 

Up next was one consisting of Curry Salmon Egg Salad Rye Bread Roll, Smoked Salmon, Curry Egg Salad and Micro Greens. Curry is not just for my beloved butter chicken or tandoori, it makes everything better! This sandwich will make you want 10 more. Which I do. Right now. Come on Chef Paul make it happen! This sandwich alone is worth the trip. The Herb Marinated Grilled Prawn, Tomato Jam, Mango Salsa, Cured Tomato, Parmesan Crisp and Mango salsa. Mango salsa should be on every menu! It would make a boiled rat delectable. It would make a toupee taste like heaven. And when you add it to one of the most delicious ocean dwellers the results are as you would expect. You want this! The Cucumber Watercress Sourdough Bread compliments the Watercress Crème Fraiche, Cucumber, Salmon Roe and Preserved Lemon extremely well. Yum! Sourdough makes everything better! I was not expecting much from a sandwich which lacks a huge protein component as I am a carnivore at heart, but the lemon tang mixed well with the very thinly sliced cucumber, which helped beat back the overpowering nature of the cucumber, and the sourdough rounded everything out.

Feeling satisfied from our first two tiers we set our sights on the dessert tier hidden masterfully at the bottom. I started with the milk chocolate brownie. I have had a bad brownie only once. It was a little old and the crunch really detracted from the fudge-y goodness. The Georgian's brownie tasted like it came right out of the oven as we entered the room. Add in the milk chocolate icing and this will satisfy even the pickiest chocolate addict. Macaron shops are the donut shops of the new millennium. As junk food places disappear macaron shops, with their luxury price tag, keep popping up. The sole reason is because they are delicious, like very delicious. The Georgian's rose water raspberry macaron ranks amongst the prestige priced Fauberge and Thierry's of the world. Jenn's favourite was the No bake Matcha Mango Cheesecake. If you've never heard of matcha you will before too long. It is everywhere. From its humble Asian beginnings it is finding its way into foods across the cultural spectrum. This cheesecake would have been good with lawn clippings on the top, but the matcha, with its myriad of health benefits, compliments it perfectly. My favourite was the Pistachio Eclair. In the hierarchy of nut deliciousness pistachio ranks high. This eclair, my first in forever, harnesses the deliciousness that is pistachio and combines it with the slight sweetness of the icing and the freshness of the pastry. It is excellent!

Have you ever noticed that some days you learn a couple new things and some days you learn nothing? Since TWG Vancouver, which, it turns out, stands for The Wellbeing Group (learning) made its debut in Vancouver in 2016 their offerings seem to be constantly improving. The service has evolved in lockstep with our host Brady and server Donnie making us feel stupendously welcome! We started our visit with the Tea Party Tea, a delightful black tea with sweet undertones, and the White Spring Yin Zhen Silver Needles. The White Spring is renowned for its health benefits and is easily added to ones health regime because it is really delicious.

The West Coast Tea Set is a uniquely Vancouver, three-tiered teatime experience crafted by the very talented Chef Cliff Hohl. Japanese Miso Sablefish, Follow Me Tea Albacore and Steelhead Hawaiian poke with uni, Sencha infused Spicy Scallop Tempura Roll and Wagyu Beef and Burgundy Truffle with Hidden-Pu-Erh infused Vietnamese Pho. Yes Pho, properly pronounced fuh (think duh with an 'f'), in a tea set; amazing! Chef Cliff makes my favourite Sablefish. To say it's delicious cheapens the meaning of the word. It is incendiary. Having visited Hawaii for the first time in 2016 I came home with what some may dub an "unhealthy poke lust". I would dub it love and the poke done at TWG in a way that would make my Oahu brethren proud! The Spicy Scallop Tempura Roll is very good and the Pho, with its incredible Wagyu beefy goodness, wouldn't feel out of place in Saigon. In all an incredible and satisfying meal, but we were fortunate enough to indulge in another tea set right after we devoured this one.

The Chic Tea Set, unlike the temporarily available West Coast tea set, is a bonafide, tried and tested TWG menu staple. It features: Smoked Salmon and Horseradish Cream with Nori and Genmaicha Furikake, Mimosa Egg Sandwich with Aioli and Mirror Quail Eggs, Smoky Russian Tea Infused Tomato Bread with Pesto Chicken and Stracciatella Cheese. We had our arms twisted and added the Finger Sandwiches plate so we could enjoy two additional sandwiches not included in the Chic Tea Set, the Foie Gras Medallion and Atlantic Lobster Salad.

 

Smoke anything, salmon, beef, leather or bicycle, and I'll eat it. I will. The smoked salmon sandwich has a really nice popcorn-y flavour to it and I could have eaten 50 even after the West Coast Tea Set! The Mimosa Egg Sandwich's yoke pops as soon as you put it in your mouth and the flavour is fabulous. The pesto chicken sandwich is literally the best chicken sandwich I've ever had! Somewhere between the unique cheese and tomato bread a new level in chicken sandwichery is reached. Lobster is the most expensive crustacean on Earth and it isn't because they're beautiful. It isn't because they're hard to catch. It is because they taste like a sunny walk through a dewy meadow on your birthday. The lobster salad sandwich tastes like that walk times 10; it is incredible! The foie gras offering is equally delicious with a tangy mustard kick.

The TWG desserts are worth the trip alone: Lemon Bush Tea infused Mousse Tart, Napoleon Tea Infused Jivara Petit Four, 1837 Tea Infused Pâté de Fruit and TWG Macaron. The Pâté de Fruit is amongst the tastiest things I've ever masticated. I have a sweet tooth, all my teeth really, and this soothed the lot. The lemon tart harkened back to my sweet Granny's homemade lemon meringue pies and I like things that make me think of the dearly departed Francis Allan so I liked this tart. Like a lot. The TWG macarons wouldn't be easily discernible sitting beside their $100 a pop, bejewelled Parisienne cousins and the Jivara Petit Four would satisfy any chocolate hounds cravings.

TWG is the best tea house in Vancouver. Full stop. It is wondrously beautiful inside and it, like the world's best athletes, the world's best anything really, strives to improve itself everyday. Chef Cliff Hohl is passionate about his craft and is also very, very good at it. Their upcoming Easter Tea Set will no doubt inspire me to wax poetically and I look forward to trying it. As you should.
